Recipe for Maltesers and Red Bull Mel's Muffins

Unfortunately, my Maltesers and Red Bull flavoured muffins were out-voted by Lemon Sensation, thanks though to Breakfast Club listener Wendie who sent in the recipe so you can make them at home!

Mel's Maltesers and Red Bull Muffins (makes 18 muffins)

500g butter or Spread, 500g sugar, 550g self raising flour, 2 eggs whisked, 1 large bag Maltesers gently crushed and 1 can of Red Bull.

Pre heat oven to 160, 140 fan, gas mark 6.

1) Cream butter and sugar untill light and fluffy with electric wisk.

2) Slowly add eggs and 3/4 can of red bull whisking at high speed (only add small amounts at a time otherwise mixture will curdle).

3) Add maltesers

4) Fold in flour a bit at a time, when all the flour has been folded in whisk again at high speed for about 3 mins. The mixture will be thinner than normal cake mix.

5) Divide mixture between 18 muffin cases and bake in oven for approx 40 mins untill a knife comes out clean.

6) When slightly cool make a small slit in the top of each muffin and pour a little extra red bull on the top of each muffin.
